Sineadh O’Conner is the owner of Sineady, a Dublin-based cocktail bar.
The former Irish Examiner is known for its sipping cocktails and a well-curated drink menu.
In a recent interview with The Irish Times, Sineagh said she makes her own drinks on a daily basis, using ingredients that are sourced locally.
“My favourite cocktail ingredients are the fresh ingredients, which come from the mountains, the coast, and the islands, but also the traditional ones like orange juice, lemon juice and grapefruit juice.
I use a lot of sea salt and some water, and I try to use the freshest ingredients I can find, and to add in some of the more exotic ones,” she said.
Sineady is not the only bar in Ireland with a cocktail menu that has grown over the years, with other bars also featuring seasonal offerings.
“It’s a wonderful way of showing people that you can enjoy the island with a glass of wine, or with a pint of Guinness,” Sineach said.
“It’s great to be able to showcase a variety of things that are available to the people in Ireland.”
Sinesay also pointed out that the drinks are also a great way to connect with other Irish people.
The bar has been serving Irish-inspired cocktails for more than 40 years, and is well-known for its cocktails with a distinctive twist.
“[It’s] about the spirit, and it’s about the drink.
It’s all about the atmosphere, and what you’re doing to your body in a very intimate way.
It really is a beautiful way to do that,” she added.
